Peanuts have the peculiar ability to have little effect upon blood sugar
until hours later.
They can over a period of several hours starting at something like 6 hours
after ingestion increase blood sugars.
In general this is probably a bad thing.
However, those that do sustained activity for many hours, this can be very
beneficial.
This is probably why nuts are so popular with mountaineers, hikers and
cross
country skiers.
This type of blood sugar effect seems true of nuts in general but is much
more pronounced in roasted peanuts.
